GIARE
Giare
are
bulbous, internally lacquered clay jugs with large openings. The
oldest ones stem from the 17th century and were hand made in Biot
at the French Riviera. They used to be the traditional storage containers
for olive oil.
Also our grandfathers used them: at the end of the harvest they
filled all the oil into the jugs, which were kept in the cellar
of the house protected from light and fluctuations in temperature
to prevent rancidity. Periodically, the oil was poured from one
jug to another to prevent sediments at the bottom of the jugs.
Nowadays,
the jugs are often used as ornaments in gardens and houses. In the
cultivation of olive oil - alas - the jugs have been replaced by
steel containers.
